lemon cookies
Ingredients:
- 2 cups all-purpose flour;
- 1/2 tsp baking soda;
- 1/2 tsp salt;
- 1 tbsp finely grated lemon zest, plus 2 tbsp fresh lemon juice;
- 1/2 cup (1 stick) unsalted butter, room temperature;
- 1 cup granulated sugar;
- 1 large egg;
- 1 tsp pure vanilla extract
Method:Preheat oven to 350°. In a medium bowl, whisk together flour, baking soda, salt, and lemon zest. In a large bowl, using an electric mixer, beat butter and granulated sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture. Drop dough by heaping tablespoon. Bake until edges are golden, 15 to 20 minutes, rotating sheets halfway through.
