Walnut halwa
Ingredients:
- walnuts - 1 cup coarsely ground powder+ 1 tbsp fine walnut powder;
- 3/4 cup milk;
- 3/4 cup sugar;
- 2 tablespoons ghee;
- 1 teaspoon cardamom powder
Method: Heat Ghee in a heavy sauce pan, add coarsely ground walnut powder. Sauté and roast till the walnuts start to turn brown. Add milk and continue stirring till the milk is absorbed and ghee starts to separate. Add sugar and the remaining 1 tablespoon of walnut powder and cardamom powder, mix well. Simmer with continuous stirring until the sugar has melted and you notice all the ingredients have come together like a halwa/ pudding. The final halwa consistency should not be too thick; it should be a little bit runny. When it starts cooling, the halwa tends to thicken and gets the right texture and consistency.
