Orange cake

 Ingredients:

  • 125 gm butter, softened;
  • 1/4 cup milk;
  • 1/4 cup orange juice;
  • 2 eggs;
  • 3/4 cup caster sugar;
  • 1-1/2 cup self-raising flour;
  • 1 tbsp. orange rind, finely grated

For Icing:

  • 1/2 cup butter, softened;
  • 1-1/2 cup icing sugar;
  • 2 tbsp. orange juice;
  • 1/2 tsp fine orange zest

Method:
Combine all the cake ingredients together and beat thoroughly for 3 min. Pour mixture into a greased loaf or ring tin. Bake in centre of 180° C oven for 30-40 min. Allow to cool and ice with orange icing.
