Coconut pie
Ingredients:
- 3 beaten eggs;
- 1-1/2 cup sugar ;
- 1/2 cup butter or margarine, melted;
- 4 tsp lemon juice;
- 1 tsp vanilla;
- 1-1/3 cup flaked coconut;
- 1 unbaked 9 inch pastry shell
Method:
Combine the eggs, juice, butter or margarine, lemon juice and vanilla. Stir in the coconut. Pour the filling into shell, unbaked pastry shell. Bake in moderate oven 350 degrees F. for 40 to 45 minutes but no more. Cool well before serving.
