Crispy onion rings
Ingredients:
- 1 cup buttermilk;
- 1 tsp hot pepper sauce
- 1 tsp sugar;
- 1 cup unbleached all-purpose flour;
- 2 tsp baking powder;
- 1/2 tsp cayenne pepper;
- 1 tsp salt;
- 1-1/2 tsp ground black pepper;
- 2 large sweet onions
Method: Combine the buttermilk, hot pepper sauce, and sugar in a medium bowl until the sugar dissolves. Combine flour, baking powder, cayenne, salt, and pepper in a shallow baking dish. Cut the sweet onions into 1/4-inch-thick slices. Separate the onion slices into rings. Dip the rings in the buttermilk and shake off the excess liquid. Dredge the rings in the flour mixture, shake off the excess, and gently place the rings and deep fry the rings.
