lemongrass chicken soup


  • 1 lemongrass stem;
  • 4 lemon leaves;
  • 250grms mushrooms;
  • 2 tomatoes;
  • 1-2 tsp chilly paste;
  • 500 gm chicken pieces;
  • 400 ml coconut milk;
  • 4 tbsp lemon juice;
  • 4 tbsp fish sauce

Cut lemongrass into 3 cm long pieces, fold lemon leaves and slice. Cut mushrooms into half. Dice tomatoes. Slice chicken into very small pieces. Heat coconut milk and add lemongrass. Simmer coconut milk for two minutes. Pour in 3/4 water and heat. Add chicken, mushrooms and tomatoes and simmer for 5 minutes. Season with chilly paste, fish sauce and lemon juice. Remove lemongrass and lemon leaves before serving.
