Singapore noodles
Ingredients:
- 200g vermicelli rice noodles,
- 2 tbsp vegetable oil,
- 3 eggs, lightly beaten,
- 6 sausage sliced diagonally,
- 1 red capsicum, seeded, thinly sliced,
- 3 garlic cloves, crushed;
- 2cm ginger, finely grated;
- 2 tsp curry powder,
- 4 green onions, thinly sliced;
- 1/4 cup soy sauce,
- 2 cups bean sprouts
Method: Cook the noodles. Make large omelets, once cooked slice into thin strips. Heat oil in wok, stir-fry sausage 30 sec. Add capsicum, garlic, ginger and curry powder. Stir-fry 1-2 min. Add noodles, green onions and soy sauce. Stir-fry 3-4 min., until heated through. Mix sprouts through. Serve topped with omelets.
