Singapore noodles


  • 200g vermicelli rice noodles,
  • 2 tbsp vegetable oil,
  • 3 eggs, lightly beaten,
  • 6 sausage sliced diagonally,
  • 1 red capsicum, seeded, thinly sliced,
  • 3 garlic cloves, crushed;
  • 2cm ginger, finely grated;
  • 2 tsp curry powder,
  • 4 green onions, thinly sliced;
  • 1/4 cup soy sauce,
  • 2 cups bean sprouts

Method: Cook the noodles. Make large omelets, once cooked slice into thin strips. Heat oil in wok, stir-fry sausage 30 sec. Add capsicum, garlic, ginger and curry powder. Stir-fry 1-2 min.  Add noodles, green onions and soy sauce. Stir-fry 3-4 min., until heated through. Mix sprouts through. Serve topped with omelets.
