Chicken in white sauce


  • 2 whole chickens;
  • plain flour;
  • extra virgin olive oil;
  • 2 cups onion flakes;
  • 2 cups celery, chopped;
  • 1/2 cup al parsley flakes;
  • 2 tbsp dried basil;
  • 1/4 cup fresh basil; chopped;
  • Salt to taste;
  • black pepper to taste;
  • 1 cup chicken broth.

Cut chicken in small pieces, coat with flour. In a pan, heat 4 tbsp of olive oil, fry chicken pieces until brown color. Set aside and cover. Fry onion flakes, celery and parsley flakes in the pan for 5 minutes, add basil. Add fried chicken pieces to the pan, add salt and pepper. Add chicken broth, cook over medium-low heat until tender.
