Banana Peanut Cake
Ingredients:
- 4 1/2 cups all-purpose flour;
- 4 tsp baking powder;
- 1 tsp salt;
- 1/2 tsp baking soda;
- 10 oz butter or margarine;
- 2 cups sugar;
- 4 eggs, lightly beaten;
- 8 bananas;
- 1/2 cup peanuts,
- coarsely chopped;
- 1/2 cup sugar and
- 1 tsp cinnamon.
Method: Sift flour, baking powder, salt and baking soda in a 3-quart bowl. Cream butter with sugar blend in eggs, fold the dry ingredients alternately with mashed bananas and peanuts. Bake in a greased baking pan at 350’ for 30 minutes. Test with a toothpick, when toothpick comes out dry, cake is done. Combine 1/2 cup sugar with cinnamon and sprinkle cake with cinnamon mixture as cake comes out of the oven.
