Gazpacho soup

 Ingredients:

  • 4 large tomatoes seeded and diced;
  • 1 can tomato sauce;
  • 3 tbsp tomato paste;
  • 1 large onion, chopped;
  • 1 stalk celery chopped;
  • 1/3 cup white vinegar;
  • 1/8 cup vegetable oil;
  • 1 tbsp fresh dill, chopped;
  • 1 tbsp fresh oregano, chopped;
  • 2 cloves garlic, minced;
  • 1/2 tsp salt;
  • 1 tsp fresh jalapenos, chopped;
  • 3-1/2 cups water;
  • 2 cucumbers, chopped

Method:
Place all ingredients in a large bowl. Stir to combine. Serve chilled and topped with 1 tsp of chopped onion or cilantro. Add pre-cooked shrimp for a shrimp gazpacho
