Gazpacho soup
Ingredients:
- 4 large tomatoes seeded and diced;
- 1 can tomato sauce;
- 3 tbsp tomato paste;
- 1 large onion, chopped;
- 1 stalk celery chopped;
- 1/3 cup white vinegar;
- 1/8 cup vegetable oil;
- 1 tbsp fresh dill, chopped;
- 1 tbsp fresh oregano, chopped;
- 2 cloves garlic, minced;
- 1/2 tsp salt;
- 1 tsp fresh jalapenos, chopped;
- 3-1/2 cups water;
- 2 cucumbers, chopped
Method:
Place all ingredients in a large bowl. Stir to combine. Serve chilled and topped with 1 tsp of chopped onion or cilantro. Add pre-cooked shrimp for a shrimp gazpacho
