Summer chickpea salad
Ingredients:
- 1 small red onion, peeled;
- 1–2 fresh red chillies, deseeded;
- 1 green Capsicum, chopped;
- 2 Tomatoes;
- 2 lemons;
- Extra virgin Olive oil;
- Salt and black pepper;
- 1 jar of chickpeas; a handful of fresh mint, chopped
Method:
Mix all the ingredients together.
