Salsa Chicken

 Ingredients:

  • 1 small onion, diced;
  • 1/2 green bell pepper, diced;
  • 2 tablespoons olive oil
  • 1 pound chicken (boneless, skinless chicken thighs or legs);
  • 2 cups of salsa;
  • 1 pound greens (chopped spinach works well);
  • 3 cups cooked brown rice.

Method:In a large oven safe pan saute onion and bell pepper in oil about 3 minutes. Next add chicken and brown on all sides. Stir in salsa and greens, then cover pan, reduce heat, and cook about 15 to 20 minutes until chicken is well cooked.
