Banana cheese casserole

 Ingredients:

  • 1 cup evaporated milk (not sweetened condensed);
  • 1/2 ounce unflavored gelatin;
  • 1 cup pineapple juice;
  • 1 cup powdered milk;
  • 2 medium bananas, mashed;
  • 1 cup cottage cheese;
  • 1 cup crushed pineapple;
  • 1/2 cup chopped walnuts

Method: Measure the evaporated milk and place in the freezer just until ice crystals just begin to form. Sprinkle gelatin over pineapple juice in a small saucepan. Let sit 5 minutes to bloom. Gently heat, but do not boil, and stir until gelatin is dissolved. Remove from heat. Place milk in a chilled mixing bowl. Beat on high speed until stiff peaks form. Blend in powdered milk, bananas, and cottage cheese on medium speed until well-combined. Fold in pineapple. Pour into a 9-inch square glass casserole dish. Sprinkle with the walnuts. Refrigerate at least 2 hours until firm.
