Fattoush salad

 Ingredients:

  • 2 sliced and halved cucumber;
  • 2  tomatoes (chopped);
  • 1 toasted Arabic bread, broken;
  • 1 crushed garlic clove;
  • 2 onions (wedged);
  • 1/4 c. fresh parsley leaves;
  • 1/2 head romaine lettuce, cut into bite-size pieces;
  • 1/4 c. fresh mint leaves;
  • 4 tbsp. fresh squeezed lemon;
  • 2 tb red vinegar;
  • 3/4 c. olive oil;
  • 1 tbsp. salt

Method:
Combine vegetables, bread and spices. Add juice and olive oil. Toast the bread or fry it then add to the salad and toss well.
