Fattoush salad
Ingredients:
- 2 sliced and halved cucumber;
- 2 tomatoes (chopped);
- 1 toasted Arabic bread, broken;
- 1 crushed garlic clove;
- 2 onions (wedged);
- 1/4 c. fresh parsley leaves;
- 1/2 head romaine lettuce, cut into bite-size pieces;
- 1/4 c. fresh mint leaves;
- 4 tbsp. fresh squeezed lemon;
- 2 tb red vinegar;
- 3/4 c. olive oil;
- 1 tbsp. salt
Method:
Combine vegetables, bread and spices. Add juice and olive oil. Toast the bread or fry it then add to the salad and toss well.
