Yogurt mint dip
Ingredient:
2 cups Fresh mint leaves;
2 cups of thick, creamy yogurt;
2 tbsp coconut scrapings;
green chilly, chopped, to taste;
grated or finely chopped ginger;
2 tbsp roasted peanuts and salt to taste
Method:
Lightly scorch the mint leaves in a heavy saucepan or frying pan to release the flavor. Grind the mint leaves, coconut, chilly, ginger and peanuts together into a coarse paste. Blend the paste into the yogurt, add salt to taste. Refrigerate and serve.
