Applesauce Waffles
Ingredients:
2 cups flour;
1/2 cup applesauce;
1/2 cup sugar;
3 large eggs – separated;
4 Tablespoons butter – softened;
1/2 teaspoon cinnamon;
1/4 teaspoon nutmeg;
1/8 teaspoon cloves
Method: In a large bowl, mix together the flour, sugar and all three spices. In a smaller bowl, beat the egg yolks and mix in the applesauce and butter. In the third bowl beat the egg whites until stiff peaks form. Add applesauce mixture to the dry ingredients and mix well. Fold in the egg whites. Cook according to waffle iron instructions.
