Banana Cake
Ingredients:
2-1/2 cups cake flour;
1-1/2 cups sugar;
1-1/2 tsp baking powder;
1-1/2 tsp baking soda;
1 tbsp ground cinnamon;
1/2 tsp salt;
3/4 cup shortening;
3/4 cup milk;
1-1/2 cups mashed ripe banana;
2 eggs, slightly beaten;
1 cup walnuts, chopped.
Method: Preheat the oven to 350° F. Mix the flour, sugar, baking powder, baking soda, cinnamon and salt together until well blended. Cream in the shortening, and add the milk and banana. When you have mixed the cake well, beat in the eggs, and finally add the chopped walnuts. Bake for 45 minutes or until the cake springs back when pressed.
