Coconut rice

 Ingredients:
1 cup rice;
1cup fresh grated coconut; 
1-1/2 tbsp ghee;
salt to taste;
coriander leaves finely chopped;
few curry leaves.

For the seasoning: 1/2 tsp mustard seeds; 1 tsp vigna mungo (urad dhal); 1 tsp channa dhal; 4(broken) red chillies; 3  green chillies (finely cut); few cashew nuts.     

Method:
Cook rice and allow it to cool. Separate the grains. Add salt and a teaspoon of ghee to it and mix well. Fry the seasonings in oil, add the coconut at the end and fry for a minute, add to the rice and mix well. Garnish with Coriander leaves and Curry Leaves.
